Small Plain Cakes

Ingredients
  Plain flour 8 Ounce
  Baking powder 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Margarine 4 Ounce
  Sugar 4 Ounce
  Fruit 4 Ounce
  Eggs 2
  Milk 4 Tablespoon (adjust quantity as needed for mixing)
Directions

1. Grease patty tins or small paper cases.
2. Sieve flour, salt and baking powder and spice if used.
3. Rub in fat with tips of fingers until mixture looks like breadcrumbs.
4. Add sugar, and fruit if used.
5. Beat the eggs and stir into the mixture, adding a little milk if necessary to mix to a dropping consistency.
6. Bake in a moderately hot oven (400°F - Gas Mark 6) for 5 minutes. Reduce heat to moderate (350°F - Gas Mark 4) and continue cooking until well risen and golden.
7. Frost as required
