June's Plain Citron And Almond Cake
|Almonds||1 Cup (16 tbs), blanched|
|Citron||1 Cup (16 tbs), diced|
|Sifted flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|White sugar||1 1⁄3 Cup (21.33 tbs)|
|Butter||2⁄3 Cup (10.67 tbs)|
|Vanilla extract||2 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
Sift together and set aside, the sifted flour, salt and baking powder.
Cream the butter and sugar together and add vanilla and almond extracts.
Add the egg whites, one by one, beating well.
Add milk and stir in dry ingredients.
Fold in fruit and almonds.
Bake in a greased 9 x 5 inch loaf pan at 350° for 70 minutes.
