Toasted Almond Cake Roll

  Almonds 2 Cup (32 tbs), blanched, slivered
  Baking powder 3⁄4 Teaspoon
  Egg whites 4
  Egg yolks 4
  Powdered sugar 1⁄2 Cup (8 tbs)
  Vanilla extract 1 Teaspoon
  Almond extract 1⁄4 Teaspoon
  Powdered sugar 1 Tablespoon (To Dredge)
For cocoa -fluff filling
  Dessert topping mix 1 Ounce (1 Envelope)
  Milk 1⁄2 Cup (8 tbs), cold
  Vanilla extract 1⁄2 Teaspoon
  Chocolate drink mix 1⁄4 Cup (4 tbs)

1. In a 12" square microwave baker, spread the almonds and microwave at HIGH for five minutes and stir every minute and a half
2. Cool till it comes to room terperatureand grind the almonds in a food processor, bring it up to a cup and a half, stir baking powder into the ground almonds and set aside
3. Line the same microwave baker with waxed paper and cut long enough to extend over the endsof the dish; butter the top of the paper where it touches the bottom of the dish
4. In a large bowl, beat egg whites with an electric mixer on high speed until stiff; in another such bowl, mix egg yolks, half a cup of powdered sugar, vanilla and almond extract
5. Beat this mixture with an electric mixture on high speed for five minutes until thick; add the nut mixture into into the yolk mixture along with egg whites
6. Spread this batter on the baking dish evenly, and microwave at HIGH for six minutes until it passes the cake test; let it stand for a minute
7. Lift the cake out of the dish with the extended ends of the waxed paper; place it on a wire rack and cover with a damp cloth, allowing to cool for almost an hour
8. For the filling, in a deep bowl, mix together the dessert topping mix, milk, vanilla and drink mix and beat with an electric mixer until peaks form

9. Remove the towel, spread the filling, roll up like a jelly roll, peel the waxed paper off, sprinkle with powdered sugar and serve
