Carrot And Orange Cake
|Orange rind||1 Tablespoon, grated|
|Eggs||2 (Size 3)|
|Carrot||10 Ounce, grated|
|Self-raising flour||8 Ounce|
|Mixed spice||1 Teaspoon|
|Butter||2 Ounce (50 Gram)|
|Icing sugar||8 Ounce|
|Orange juice||1 Tablespoon|
|Orange food coloring/Te||1 Teaspoon|
1 Preheat the oven at 300 degrees farenheit/150 degrees celsius
2 Prepare a 2 lb loaf tin, base lined and greased.
3 In a bowl, cream butter, rind and sugar.
4 Beat in eggs one at a time.
5 Add sultanas, carrot, dry ingredients and orange juice.
6 Spread in the prepared tin.
7 Bake for 1 1/2 hours.
8 Leave in the tin for 5 minutes before turning out onto a wire tray.
9 For the frosting - cream the butter until light and fluffy.
10 Gradually add icing sugar, orange juice and a few drops of colouring.
11 Beat until spreadable.
12 Spread the icing on the cake and finish neatly.
13 Cut into pieces and serve.
