Apple Shortcakes

Ingredients
  Apple slices 3⁄4 Pound, frozen, thawed, unsweetened
  Lemon 1 , juiced and rind finely grated
  Self raising flour 8 Ounce
  Baking powder 1 Teaspoon (Leveled)
  Butter/Margarine 3 Ounce
  Cold milk 1 Ounce
  Caster sugar 2 Tablespoon (Leveled)
  Ground cinnamon 1 Teaspoon (Leveled)
  Clear honey 1 Tablespoon
  Cream 1 Tablespoon
Directions

MAKING
1. In a bowl, add apple slices and lemon juice and toss them together
2. In a larger bowl, sift the flour and baking powder and mix it in with butter or margarine
3. To it, add the lemon rind and castor sugar
4. Add cold milk to it and blend it into a soft dough
5. Roll the dough out and line 8 shallow Yorkshire pudding tins, about 4" in diameter with it
6. Place the apple slices on the shortcake base
7. In a bowl, make a mixture of 2 tablesppons of sugar and cinnamon and sprinkle it over the apples
8. Bake this in the oven at 400°F for about half an hour or less

SERVING
9. Brush the shortcakes with Honey
10. Serve warm with cream
