Molasses Layer Cake
|Shortening||3⁄4 Cup (12 tbs)|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Molasses||3⁄4 Cup (12 tbs)|
|All purpose flour||2 3⁄4 Cup (44 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Milk||1 Cup (16 tbs)|
Cream shortening well; add sugar gradually, beating until light and fluffy.
Add eggs, one at a time, beating thoroughly after each addition.
Add molasses and mix well.
Sift in dry ingredients alternately with milk, beating until smooth.
Pour into 2 round 9-inch layer-cake pans lined on bottom with wax paper.
Bake in preheated moderate oven (350°F.) for 35 to 40 minutes.
Spread Fluffy Molasses Frosting between layers and on top and sides of cake.
