Plum Cake With Orange Rum Butter

Ingredients
  Soft margarine 6 Ounce (1 Tub)
  Soft light brown sugar 6 Ounce
  Eggs 3 Large
  Golden syrup 1 Tablespoon
  Blackcurrant jam 3 Tablespoon
  Seedless raisins 12 Ounce
  Currants 6 Ounce
  Chopped mixed peel 2 Ounce
  Crystallized ginger 2 , chopped (2 Pieces)
  Shelled walnuts 2 Ounce, chopped
  Ground almonds 2 Ounce
  Rum 2 Tablespoon
  Self raising flour 8 Ounce
  Baking powder 1 Teaspoon (Leveled)
  Ground mixed spice 1 Teaspoon (Leveled)
For orange rum butter
  Soft margarine 4 Ounce (1 Tub)
  Icing sugar 12 Ounce, sifted
  Rum 1 1⁄2 Tablespoon
  Orange juice 1 Tablespoon
  Ground cinnamon 1⁄2 Teaspoon (Leveled)
Directions

GETTING READY
1. Take a three pint ring mould; grease and flour it

MAKING
2. Take a large bowl and add the first twelve ingredients to it - from margarine to the rum - sift flour, baking powder and spice on it
3. Beat them all well for at least a couple of minutes or more until well blended
4. Transfer this into the prepared mold, bake in the oven for fifteen minutes at 400°F, then turn down the temperature and bake again for two and a half hours at 300°F
5. pour orange rum butter over it and chill.
