|Mashed cooked parsnips||2 Cup (32 tbs)|
|Melted butter/Cooking oil||1 Tablespoon|
|All purpose flour||1 Tablespoon|
|Cracker crumbs||1⁄4 Cup (4 tbs)|
|Butter||2 Tablespoon (For Frying)|
Mix parsnips with next 5 ingredients.
Shape into flat cakes.
Dip into crumbs, covering completely.
Put in refrigerator to chill.
Fry until brown in hot butter.
