Ingredients
  Mashed cooked parsnips 2 Cup (32 tbs)
  Melted butter/Cooking oil 1 Tablespoon
  All purpose flour 1 Tablespoon
  Salt 1 Teaspoon
  Pepper 1 Dash
  Egg 1
  Cracker crumbs 1⁄4 Cup (4 tbs)
  Butter 2 Tablespoon (For Frying)
Directions

Mix parsnips with next 5 ingredients.
Shape into flat cakes.
Dip into crumbs, covering completely.
Put in refrigerator to chill.
Fry until brown in hot butter.
