Quick Eccles Cakes
These Eccless cakes are so wonderful and delicious to keep your hands off it. Truly flavorsome with lemon, coconut and mixed spices!
|Short crust pastry||1|
|Ground coconut||1 Ounce|
|Golden syrup||4 Ounce|
|Nutmeg and spice||1 Teaspoon (Leveled)|
|Lemon juice||1 Teaspoon (Leveled)|
|Ground almonds||1 Ounce|
Line some patty tins with pastry, put in each a layer of syrup, then currants, spice, lemon juice, coconut and almonds.
Cover with pas- try.
Roll over with the pin very gently.
Bake in a moderate oven for about 30 minutes.
