Quick Cardamom Cake
|Melted butter/Margarine||1 Cup (16 tbs)|
|All purpose flour||3 Cup (48 tbs)|
|Baking powder||1 Teaspoon|
|Ground cardamom||3⁄4 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs)|
Beat sugar into eggs, a little at a time.
Beat well after each addition.
Add melted butter and beat until batter is light-colored, about 3 minutes with electric blender at medium speed, or 5 minutes by hand.
Sift together flour, baking powder, and cardamom.
Gradually stir flour mixture into batter.
Grease a baking pan (15 x 10 x 1 inch).
Spread dough to 1/2-inch thickness in pan.
Sprinkle top with sugar and nuts.
Bake in preheated moderate oven (350°F.) for 25 minutes, or until lightly browned.
Cool, and cut into squares.
Makes about 48 squares.
