Feather Spice Cake
|Pastry flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground mace||1⁄2 Teaspoon|
|Milk||3⁄4 Cup (12 tbs)|
|Cold water||2 Tablespoon|
|Sugar||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Ground cloves||1⁄4 Teaspoon|
|Molasses/Treacle||1⁄3 Cup (5.33 tbs) (or syrup)|
Sift flour once, measure, add baking powder, salt and spices and sift together three times.
Cream butter and sugar thoroughly until light and fluffy.
Add cold water and mix until light.
Then add molasses and blend well.
Add flour mixture alternately with milk — a small amount at a time.
Beat after each addition until smooth.
Bake in a greased and floured tube pan at 375° F for about one hour — OR bake in two greased and floured 9-inch layer pans for 25 - 30 minutes.
