|Icing sugar||3 Ounce|
|Sifted icing sugar||1⁄4 Cup (4 tbs)|
|Jam||1 Teaspoon (Leveled)|
Cream the butter, salt, essence and sugar together.
Sift the flour and add.
The mixture will be stiff.
Place in a pump with a star nozzle, and force mixture into paper patty cases, using a circular movement, but leaving a depression at the top in the centre.
Bake slowly at 275° F for 35 minutes.
When cold, dust the tops with icing sugar and fill the centres with a little jam.
