Basic White Cake
|Unbleached whiteflour||1 1⁄3 Cup (21.33 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|Cream of tartar||1⁄4 Teaspoon|
|Sugar||1⁄3 Cup (5.33 tbs)|
Sift dry ingredients.
Combine oil, vanilla and buttermilk.
Stir into dry ingredients.
Whip egg whites until foamy.
Add cream of tartar and whip to soft peaks.
Add 1/3 cup sugar slowly and whip to firm peaks.
Fold whites into batter.
Pour into two 8" cake pans, lightly greased and with a waxed paper circle on the bottom.
Bake at 350° for 20 minutes.
Invert layers onto rack to cool.
Remove waxed paper.
