|Cold water||1⁄4 Cup (4 tbs)|
|Baking soda||1⁄4 Teaspoon|
|Mocha frosting||1⁄2 Cup (8 tbs)|
Mix flour, baking powder and salt.
Beat eggs in large bowl.
Gradually beat in 3/4 cup sugar; beat until fluffy and light in color.
Gradually fold in flour mixture.
Melt chocolate in saucepan over very low heat, stirring constantly until smooth.
Immediately add water, 2 tablespoons sugar and the soda.
Stir until thick and smooth.
Blend quickly into batter.
Pour into 15 x 10-inch jelly roll pan which has been greased on bottom and sides; then lined on bottom with waxed paper and greased again.
Bake at 350° for 18 to 20 minutes, or until cake tester inserted in center comes out clean.
Remove from pan, remove paper and finish cooling on rack.
Cut into three 10x5-inch pieces.
Spread frosting between layers and over top and sides.
Garnish with Chocolate Leaves, if desired.
Yule Log: Prepare Holiday Cake; turn out onto a towel, sprinkled with confectioners sugar, after baking.
Remove paper and trim off crisp edges of cake.
Starting on short side, roll up cake with towel.
Cool on rack.
Prepare Chocolate Cheese Frosting.
Unroll cake and spread with 1 3/4 cups frosting.
Reroll and place on serving plate.
Spread remaining frosting on cake.
If desired, garnish with rolled green gumdrops cut in holly-leaf shapes and piped with melted chocolate; add red cinnamon candies.
