Angel Food Cake
|Unbleached white flour||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Egg whites||1 1⁄4 Cup (20 tbs) (About 10)|
|Cream of tartar||1 Teaspoon|
|Sugar||3⁄4 Cup (12 tbs)|
Sift flour and 1/4 cup sugar twice.
Whip egg whites until foamy.
Add cream of tartar and whip to soft peaks.
Slowly add 3/4 cup sugar and whip to wet peaks.
Sift some of the flour mixture over whites.
Fold in gently.
Sift remaining flour mixture over whites and fold in.
Spoon into ungreased 9" tube pan.
Cut through batter with knife to break any air pockets.
Bake at 325° on lower oven rack for 45 minutes or until top is light brown and springs back when touched.
