Brain Batter Cakes

Ingredients
  Brains 1 Pound
  Salt To Taste
  Water 1 Cup (16 tbs)
  Vinegar/Lemon juice 1 Tablespoon
  Pepper 1⁄8 Teaspoon
  Sugar 1 1⁄2 Teaspoon
  Worcestershire 1 Teaspoon
  Curry powder 2 Teaspoon
  Onion 1 Medium, finely chopped
  Batter 4 Cup (64 tbs)
  Cooking fat 1 Tablespoon
Directions

Using salted cold water soak brains for 15 minutes; drain and carefully remove membrane with tip of paring knife.
Cover with boiling water; add 1 teaspoon salt and vinegar; simmer for 15 minutes.
Drain, plunge into cold water, and drain again.
Chop brains fine.
Add 1 teaspoon salt, pepper, sugar, Worcestershire, curry powder, and onion.
Fold into Batter and drop by tablespoonfuls into hot fat.
Fry until brown; drain on absorbent paper.
Makes 4 servings.
