Molasses Spice Cake
|Shortening||1⁄2 Cup (8 tbs)|
|Molasses||1 Cup (16 tbs)|
|Sifted all purpose flour||2 1⁄3 Cup (37.33 tbs)|
|Baking powder||1 1⁄4 Teaspoon|
|Baking soda||3⁄4 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Ground allspice||1⁄2 Teaspoon|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Filling||1 Cup (16 tbs)|
|Fluffy white frosting||1 Cup (16 tbs)|
Beat in molasses and egg.
Add sifted flour, baking powder, soda, salt, ginger, and allspice alternately with buttermilk, beating until smooth, beginning and ending with dry ingredients.
Pour into two 8-inch layer pans lined on the bottom with greased wax paper.
Bake in preheated moderate oven (375°F.) for about 30 minutes.
Cool; spread Fruit Filling between layers and Fluffy White Frosting on top and sides.
