Harvest Apple Cake
|Apples||4 Cup (64 tbs), coarsely chopped|
|Baking soda||2 Teaspoon|
|Sugar||2 Cup (32 tbs)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Walnuts||1 Cup (16 tbs), chopped|
Combine apples and sugar, let stand.
Beat eggs slightly, beat in oil and vanilla.
Mix and sift together flour, baking soda, cinnamon and salt.
Stir in alternately with apple-sugar mixture.
Stir in walnuts; pour in greased and floured oblong pan 13" x 9" x 2".
Bake at 350° about 1 hour or until cake tests done.
Let stand in pan until quite cool; turn out on rack to complete cooling.
Cut in squares and serve.
