Caraway Or Seed Cake
|Sifted cake flour||2 Cup (32 tbs)|
|Ground mace||1⁄2 Teaspoon|
|Butter||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Eggs||3 , separated|
|Caraway seeds||2 Tablespoon|
Sift together flour, salt, and mace.
Cream butter until soft.
Gradually beat in sugar, about 2 tablespoons at a time.
Beat in egg yolks, one at a time, beating well after each addition.
Beat egg whites until they stand in stiff peaks.
Fold into batter.
Add flour, beating only until absorbed in batter.
Stir in caraway seeds.
Turn into greased and floured loaf pan (9x5x3 inches).
Bake in preheated moderate oven (350°F.) for 45 to 50 minutes, or until cake tests clean.
Cool on rack.
Serve cut into very thin slices.
