Pineapple Filled Cake
|Basic white cake layers||2|
|Pineapple slices||4 (Fresh)|
|Chopped fresh pineapple||1 Cup (16 tbs), drained|
|Grated lemon rind||2 Teaspoon|
Combine sugar and cornstarch in a saucepan.
Add pineapple and lemon rind.
Cook until mixture is thickened and transparent, stirring constantly.
If too thick, thin with pineapple juice.
Assembly: Place one cake layer on serving plate.
Spread with half of filling.
Place second layer on top of first.
Spread with remaining filling.
Arrange pineapple slices on top.
