Famous Corn Flour Sponge Cake
|Cornflour||2⁄3 Cup (10.67 tbs)|
|All purpose flour||1 Tablespoon|
|Baking powder||1 Teaspoon|
|Fine castor sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄4 Teaspoon|
Preheat oven to 375 degrees.
Sift cornflour, all-purpose flour and baking powder together 3 times.
Beat egg whites and salt in mixer bowl until soft peaks form.
Add sugar gradually, beating constantly until stiff peaks form.
Beat in egg yolks and vanilla until blended.
Fold dry ingredients into egg mixture.
Spoon into 2 greased and floured 8-inch round cake pans.
Bake for 18 to 20 minutes or until layers test done.
Remove to wire rack to cool completely.
