Carrot Coffee Cake
|Sugar||3⁄4 Cup (12 tbs)|
|Vegetable oil||1⁄3 Cup (5.33 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Grated carrot||1 Cup (16 tbs) (2 Medium)|
1.In a slow cooker, place a metal rack or trivet.
2.Take a 6 cup mod or baking dish and grease it well.
3.Take eggs and beat them in a bowl and add sugar and oil gradually until the egg mixture thickens.
4.In a separate bowl, put flour, cinnamon, baking powder, salt and baking soda and stir well.
5.Mix the flour mixture with egg mix and stir.
6.Put greated carrots in the mixture.
7.Pour the mixture into the molds and cover them with a foil.
8.In a slow cooker, put two cups water and place the molds on the rack and cover the cooker with a lid.
9.Let the ingredients cook on HIGH for 31/2 hrs.
10.Remove the cooker from heat and let the cake stand at room temperature.
11.Serve the cakes in adish with whipped cream.
