One Bowl Birthday Cake
|All purpose flour||2 Cup (32 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Baking powder||4 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Almond extract||1 Teaspoon|
|Sweetened flaked coconut||1 Cup (16 tbs)|
|Easy chocolate icing||1⁄4 Cup (4 tbs)|
Grease and flour two 9-inch (1.5 L) round cake pans.
In large bowl, stir together flour, sugar, baking powder and salt.
Add 3/4 cup (175 mL) of the milk, shortening and almond extract; beat for 1 minute.
Add remaining milk and eggs; beat for 1 minute or until smooth.
Stir in coconut.
Pour into prepared pans; bake in 350°F (180°C) oven for 30 to 40 minutes or until cake tester inserted in center comes out clean.
Let cool in pans for 5 minutes; turn out onto racks and let cool completely.
Spread Easy Chocolate Icing between cake layers and over top and sides.
Garnish with coconut (if using).
