Microwaved Pineapple Cherry Upside Down Cake
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Canned sliced pineapple||8 1⁄2 Ounce, drained and juice reserved (1 Can)|
|Yellow cake mix||9 Ounce (1 Package Of 1 Layer Size)|
|Pineapple juice||1⁄2 Cup (8 tbs) (Reserved From The Pineapples)|
Combine butter and brown sugar in (8 x 8-inch) baking dish.
MICROWAVE 1 MINUTE, 30 SECONDS to 2 MINUTES on HIGH, or until butter and sugar melt.
Arrange pineapple rings in syrup.
Place maraschino cherry in center of each pineapple ring.
Blend cake mix, pineapple juice and eggs in medium mixing bowl on low speed of electric mixer.
Beat on medium speed two minutes.
Pour evenly over fruit.
MICROWAVE 8 1/2 to 10 MINUTES on HIGH, or until wooden pick inserted in center comes out clean, rotating dish 1/2 turn after 5 minutes.
Immediately invert onto serving plate and remove dish.
Serve warm or cooled to room temperature, with whipped cream, if desired.
