Quick Fruit Cake
|Self raising flour||8 Ounce|
|Soft butter/Margarine||6 Ounce|
|Soft brown sugar||6 Ounce (185 Gram)|
|Treacle/Golden syrup||1 Tablespoon|
|Mixed dried fruit||12 Ounce (375 Gram)|
|Glace cherries||2 Ounce, chopped (60 Gram)|
|Ground mixed spice||1 1⁄2 Teaspoon|
Put all the ingredients into a warm mixing bowl (flour first); beat on low speed until combined, then on medium speed for just a few seconds to blend thoroughly but DO NOT OVERMIX.
Transfer to a greased and lined 20 cm/8 inch round cake tin and bake at 170°C/325°F/Gas Mark 3 for 1 1/4-1 1/2 hours or until a skewer inserted in the middle comes out clean and the cake does not 'sing' if held close to the ear.
