|Mixed dried fruit||1 Pound (450 Gram)|
|Soft brown sugar||8 Ounce (225 Gram)|
|Soda bicarbonate||1 Teaspoon|
|Fresh milk||1⁄2 Pint (300 Milliliter)|
|Malt vinegar||3 Tablespoon|
Rub the butter into the flour until it resembles breadcrumbs, then add the fruit and sugar.
Sprinkle the bicarbonate of soda into the milk and add the vinegar.
This will begin to froth up and start foaming.
Add it to the other ingredients while it's still foaming and mix well.
Turn the mixture into a lightly greased, deep 23 cm - 9" round tin.
Bake at 400°F - 200°C - Mark 6 for 30 minutes.
After that time reduce the temperature to 325°F - 170°C - Mark 3 and continue to bake for another 1.5 hours or until firm to the touch.
If the top gets brown before it is cooked then cover with brown paper and continue cooking.
Leave to cool in the tin for 30 minutes then turn out onto a wire to cool completely.
