Walnut Whizz Cake

Ingredients
  Caster sugar 7 Ounce (220 Grams)
  Plain flour 4 Tablespoon
  Desiccated coconut 3 Ounce (90 Grams)
  Chopped walnuts 2 Ounce (60 Grams)
  Grated lemon rind 2 Teaspoon
  Eggs 4 Small
  Milk 12 Fluid Ounce (375 Milliliter)
  Butter 4 Ounce, melted (125 Grams)
  Double cream 8 Fluid Ounce, whipped (250 Milliliter)
Directions

1. Place sugar, flour, coconut, walnuts and lemon rind in a food processor and process for 30 seconds. Add eggs, milk and butter and process for 1 minute longer.
2. Pour mixture into a greased and lined 23 cm (9 in) flan dish. Bake for 45 minutes or until cake is cooked when tested. Serve warm with whipped cream.
