Banana Nut Coffee Cake
|Shortening||1⁄4 Cup (4 tbs), melted|
|Milk||1⁄4 Cup (4 tbs)|
|Mashed ripe banana||1⁄2 Cup (8 tbs) (About 1)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Baking powder||3⁄4 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs) (For Topping)|
Set Power Select at MEDIUM for 9 to 10 minutes.
In medium bowl, combineshortening, milk, egg, banana and sugar; add flour, nuts, baking powder, salt and baking soda, stirring only until flour is moistened.
Pour into greased 8 or 9-inch round baking dish; sprinkle with Nut Topping.
Let STAND, covered, 10 minutes.
Store, covered, until ready to serve.
