Orange Coffee Cake
|Whole wheat flour||1 2⁄3 Cup (26.67 tbs)|
|Soy flour||1⁄2 Cup (8 tbs)|
|Baking powder||1 Tablespoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Eggs||2 , beaten|
|Grated orange peel||2 Tablespoon|
|Honey||1⁄4 Cup (4 tbs)|
|Melted butter||1 Tablespoon|
Stir together the flours, salt, and baking powder.
In a separate bowl combine the honey, orange peel, orange juice, melted butter, eggs, and vanilla.
Mix the liquid ingredients with the dry with a minimum of strokes.
(4 ) Pour into an oiled and floured cake pan.
Combine the orange peel, honey cinnamon, and butter for the topping; drizzle the topping over the batter in the pan.
Bake at 400°F for 30 minutes, until the cake pulls away from the sides of the pan.
