|Egg/1/4 pint thick white sauce||1|
|Flour||2 Ounce (For Coating)|
|Crisp breadcrumbs||1⁄2 Cup (8 tbs)|
|Fat||6 Tablespoon (For Shallow Frying)|
Mix the potatoes and cooked flaked fish thoroughly with a fork.
Add the beaten egg or sauce, salt and pepper.
Form into about 8 flat cakes.
Roll these cakes in a little flour, then brush lightly with beaten egg and coat with breadcrumbs.
Heat the fat in a frying pan and when hot fry the cakes quickly on one side, turn and fry again on the other side.
Drain on crumpled kitchen or tissue paper; serve at once.
