Easy Coconut Cake
|Egg whites||6 (Only Whites)|
|Flour||1 Cup (16 tbs)|
|Corn flour||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|White vinegar||2 Tablespoon|
|Cream||1⁄2 Cup (8 tbs)|
|Desiccated coconut powder||3⁄4 Cup (12 tbs)|
|For glazed icing|
|Icing sugar||1 Cup (16 tbs)|
Sieve flour, corn flour and baking powder together.
Beat cream and sugar.
Add flour mixture to cream mixture and mix well.
Beat egg whites till peaks form.
Put flour mixture over eggs folding (mixing) gently.
Put coconut and fold gently.
Grease a cake tin.
Pour batter into it.
Bake in a preheated oven at 160°C for 35 - 40 minutes.
Insert a knife in the centre.
If comes out clean, cake is ready.
Invert the tin and remove the cake immediately.
Prepare glazed icing by dissolving sugar in hot water.
Boil till sugar is dissolved.
Beat white of egg.
Add sugar solution to it.
Spread this icing over the cake and cool it.
