Fresh Apple Cake
|All purpose flour||2⁄3 Cup (10.67 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Shortening||1⁄3 Cup (5.33 tbs)|
|Apples||2 Cup (32 tbs), chopped|
|Nuts||3⁄4 Cup (12 tbs), chopped|
|Powdered sugar||1⁄3 Cup (5.33 tbs)|
|Half and half||2 Teaspoon|
Line bottom of 9-inch round cake dish with wax paper.
In medium mixing bowl, combine cake ingredients, except apples and nuts.
Beat at low speed of electric mixer until blended.
Beat at high speed for 1 minute, scraping bowl occasionally.
Stir in apples and nuts.
Spread batter evenly into prepared dish.
Place dish on saucer in microwave oven.
Microwave at 70% (Medium High) for 5 minutes.
Rotate dish half turn.
Increase power to High.
Microwave for 3 to 8 minutes, or until top appears dry and center springs back when touched lightly, rotating dish once.
Let stand on counter for 5 minutes.
Invert onto wire rack.
In small bowl, blend powdered sugar and half-and-half.
Drizzle glaze over cake.
