Cider Spice Cake
|Flour||2 1⁄4 Cup (36 tbs)|
|Ground cinnamon||2 Teaspoon|
|Ground cloves||1 Teaspoon|
|Ground nutmeg||1 Teaspoon|
|Baking soda||3⁄4 Teaspoon|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), softened|
|Apple cider/Apple juice||1 1⁄4 Cup (20 tbs)|
|Raisins||1 Cup (16 tbs)|
|Confectioners sugar||1 Tablespoon|
Set Power Select at MEDIUM.
Combine 2 1/4 cups flour, cinnamon, cloves, nutmeg, salt and baking soda.
With electric mixer, cream sugar and butter; add egg.
Alternately add flour mixture and cider, mixing until smooth; fold in raisins tossed with 2 tablespoons flour.
In greased 10 or 12-cup microwave-safe Bundt dish, pour batter; heat 13 1/2 to 15 minutes.
Let STAND, covered, 10 minutes, before inverting onto serving platter.
Let stand, covered, until cool.
Just before serving, sprinkle with confectioners sugar.
