Apple Dessert Cake

Ingredients
  Mixed spice 1 Teaspoon, ground
  Sponge cake mix 1 Packet
  Coconut 45 Gram, dessicated (1 1/2 oz)
  Apple slices 440 Gram (14 oz, canned, drained)
  Apricot jam 4 Tablespoon, melted
Directions

1. Combine mixed spice with butter cake mix, then make up following packet directions. Fold in coconut.
2. Spoon half the cake mix into a lightly greased and lined 20 cm (8 in) round cake tin, top with half the apples and remaining cake mix. Arrange remaining apple slices.
3. Bake for 50-60 minutes or until cake is cooked when tested. Brush with jam.
