Microwaved Pineapple Upside Down Cake
|Butter||1⁄4 Cup (4 tbs)|
|Packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Canned pineapple slices||8 1⁄2 Ounce, drain and reserve juice (1 Can)|
|Yellow cake mix||9 Ounce (1 Layer Size, 1 Package)|
Combine butter, sugar, and nuts in glass baking dish.
Cook on HIGH (9) for 2 minutes or until butter and sugar melt to form syrup.
Arrange pineapple rings and cherries in syrup.
Prepare cake mix according to package directions, substituting reserved pineapple juice for some of the required water.
Pour evenly over fruit.
Cook on BAKE (6) for 6 minutes.
Cook on HIGH (9) for 3 minutes.
Immediately invert onto serving platter and remove dish.
Serve warm with whipped cream if desired.
