|Whole wheat pastry flour||1 3⁄4 Cup (28 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground cloves/Nutmeg||1⁄2 Teaspoon|
|Butter||1⁄2 Cup (8 tbs) (At Room Temperature)|
|Honey||3⁄4 Cup (12 tbs)|
|Applesauce||1 Cup (16 tbs)|
|Raisins/Chopped dates / both||1⁄2 Cup (8 tbs)|
|Chopped walnuts/Pecans||1 Cup (16 tbs)|
Preheat oven to 350° F.
Grease and flour a baking pan.
Sift flour, salt, baking soda and spices together into a bowl. Set aside.
Cream butter in a large mixing bowl. Add honey and mix well. Stir in dry ingredients and applesauce. Mix thoroughly, scraping sides of bowl occasionally. Stir in dried fruit and nuts.
Turn batter into pan. Bake for 30 to 45 minutes or until sides of cake begin to pull away from the edge of the pan and a toothpick inserted in the center comes out clean.
Place pan on a wire rack and let cool for 10 minutes. With a small flat spatula, carefully loosen sides of cake. Invert on the wire rack and remove pan.
