Chocolate Angel Food Cake
|Egg white||1 1⁄2 Cup (24 tbs) (about 10 eggs , at room temperature)|
|Cream of tartar||1 1⁄4 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Cake flour||3⁄4 Cup (12 tbs)|
|Cocoa||1⁄4 Cup (4 tbs)|
Combine egg whites, cream of tartar, salt, and vanilla in large bowl and beat with electric mixer until mixture holds peaks.
Continue beating, adding 1/2 cup of the sugar a little at a time.
In small bowl, blend flour, cocoa, and remaining sugar.
Sift mixture on top of egg whites and gently fold in with a rubber spatula.
Spoon batter into tube pan and bake 30 to 40 minutes or until a toothpick inserted in center comes out clean.
Remove from oven, immediately turn pan upside down on rack, but do not remove cake.
When cool, remove cake and serve plain or with a melted chocolate glaze or Raspberry Sauce.
