Apple Walnut Coffee Cake

Ingredients
  Sugar 2⁄3 Cup (10.67 tbs)
  Buttermilk 1⁄2 Cup (8 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Egg 1
  All purpose flour 1 1⁄4 Cup (20 tbs)
  Baking soda 1⁄2 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Red all purpose apple 1 Medium, unpared, chopped to make 1 cup
  Red all purpose apple 1 Medium, unpared, thinly sliced
  Walnut topping 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)
Directions

1. Lightly grease bottom only of round dish, 8 x 1 1/2 inches. Beat sugar, buttermilk, oil and egg in medium bowl with fork. Stir in remaining ingredients except sliced apple and Walnut Topping just until moistened. Spread batter evenly in dish.
2. Microwave uncovered on medium (50%) 9 to 10 minutes; rotating dish 1/2 turn after 5 minutes, until top edge of cake is set but still moist. Arrange apple slices spoke fashion on coffee cake; sprinkle evenly with Walnut Topping.
3. Microwave uncovered on high 3 to 4 minutes, rotating dish 1/2 turn after 2 minutes, until apple slices are slightly tender and wooden pick inserted in center of cake comes out clean. Let stand uncovered 5 minutes.
