Salt Cod Cakes

Ingredients
  Salt cod 8 Ounce
  Chopped peeled potatoes 3 Cup (48 tbs)
  Egg 1 , beaten
  Butter/Margarine 2 Tablespoon
  Pepper 1⁄8 Teaspoon
  Crushed saltine crackers 3⁄4 Cup (12 tbs)
  Cooking oil 2 Cup (32 tbs) (For Deep Frying)
  Lemon wedges 2
Directions

Soak salt cod in enough cold water to cover for 12 hours, changing water once.
Drain well.
Chop the cod.
In covered saucepan cook cod and potatoes in a large amount of boiling water for 15 minutes; drain.
In mixer bowl beat cod and potatoes with electric mixer till well mashed.
Add egg, butter or margarine, and pepper; beat well.
Using about 1/4 cup cod mixture for each, shape into 1/2-mch-thick cakes.
Coat with crushed crackers.
In wok heat 1 1/2 inches oil to 375°.
Fry a few cakes at a time for 2 minutes; turn and fry 1 to 2 minutes longer or till golden.
Drain on paper toweling.
