Orange Refrigerator Cake
|Angel food cake||34 (Day Old)|
|Orange juice||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|Marshmallows||12 , cut|
|Orange segments||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Teaspoon|
|Heavy cream||1⁄2 Cup (8 tbs)|
Line sides and bottom of an 8-inch spring mold pan with strips of cake.
Soften gelatin in 1/4 cup of the orange juice.
Bring 1/2 cup orange juice and sugar to a boil, remove from heat.
Add gelatin and stir until dissolved.
Add butter, remaining orange juice and salt.
Set in a pan of cracked ice and beat thoroughly with a rotary beater.
Chill until slightly congealed, beating at intervals to keep butter from forming into lumps.
Add marshmallows, orange segments and lemon juice to the slightly congealed mixture.
Whip cream until it holds its shape.
Fold into the gelatin mixture thoroughly.
Turn into cake lined pan.
Top with strips of cake.
Chill several hours before serving.
