Karidopita Walnut Cake
|Sugar||1⁄2 Cup (8 tbs)|
|Orange juice||2 Tablespoon|
|Cognac||1 1⁄2 Tablespoon|
|Ground walnuts||1 1⁄2 Cup (24 tbs)|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
|Shredded orange peel||1 Teaspoon|
|Shredded lemon peel||1⁄2 Teaspoon|
|Baking powder||1 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground cloves||1⁄8 Teaspoon|
|Cream of tartar||1⁄4 Teaspoon|
Beat egg yolks till light; gradually add sugar, beating till thick.
Stir in orange juice and cognac.
Combine nuts, crumbs, peels, baking powder, and spices.
Stir in egg yolk mixture.
Beat egg whites with cream of tartar to stiff peaks.
Fold gently into nut mixture till well distributed.
Bake in a well-greased and lightly floured 8 x 8 x 2-inch baking pan in 350° oven for about 30 minutes.
Cut in small squares.
Serve with whipped cream and shredded orange peel, if desired.
