Rice Cake And Cheese Snack

Ingredients
  Rice cakes 2 , unsalted
  Prepared yellow mustard 1 Teaspoon
  Fat free cheddar cheese/Commercial low-fat cheddar cheese 1⁄4 Cup (4 tbs), grated (Or Defatted)
Directions

Preheat oven to 350° F.
Place rice cakes on baking sheet or aluminum foil and bake 3 to 4 minutes, or until crisp.
Remove from oven, spread with mustard and top with cheese.
Return to oven and bake 3 to 4 minutes, or just until cheese melts.
