Fresh Apple Cake
|Butter||1 Cup (16 tbs), divided|
|Sugar||1 Cup (16 tbs)|
|Apple||3 Cup (48 tbs), chopped|
|All purpose flour||1 Cup (16 tbs)|
|Ground cinnamon||1 Teaspoon|
|Ground nutmeg||1 Teaspoon|
|Pecans||3⁄4 Cup (12 tbs), finley chopped|
|Firmly packed light brown sugar||1 Cup (16 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
Microwave 1/2 cup butter in a 2-quart glass casserole at HIGH 30 seconds.
Cream sugar and softened butter.
Beat in egg and apple.
Sift together flour, soda, salt, cinnamon, and nutmeg.
Add nuts to dry ingredients.
Mix dry ingredients and apple mixture.
Cover the bottom of a 9-inch round microwave baking pan with waxed paper or paper towel.
Spread batter in baking pan.
Microwave at HIGH 10 minutes.
Rotate dish 1/2 turn after 5 minutes.
Let cake stand 5 minutes.
Mix brown sugar, remaining 1/2 cup butter, and milk in a 2-cup glass measure.
Microwave at HIGH 2 minutes.
Stir after 1 minute.
Spread over cake.
