Yam Spice Cake
|Sifted cake flour||4 Cup (64 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Baking powder||4 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Shortening||1 Cup (16 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Mashed cooked yams||2 1⁄2 Cup (40 tbs)|
Sift flour, salt, baking powder, baking soda, and spices together.
Cream shortening. Gradually add sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition.
Add yams and mix thoroughly. Add sifted ingredients alternately with milk to a creamed mixture. Mix well after each addition.
Turn into two greased 8-inch square pans. Bake in moderate oven (350°F) 1 hour and 20 minutes, or until done.
Cool 5 minutes in pans. Turn out on cooling racks and cool thoroughly. Cover with your favorite simple frosting mix. Makes two 8-inch squares layers.
