Soft Wedding Cake White Icing

Ingredients
  Soft vegetable shortening 1⁄2 Pound
  Sifted icing sugar 5 Cup (80 tbs)
  Milk 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Almond extract 2 Teaspoon
Directions

Beat the shortening on medium speed until creamy, then add the icing sugar and milk alternately, beating after each addition.
Add salt and extract.
Test the consistency.
The icing is a good thickness when it is smooth and does not run when a dab is spread on the side of the cake.
Add more sifted icing sugar, or thin with milk if necessary.
We like icing to be slightly stiffer for a decorating tube than for spreading.
Beat this icing occasionally when frosting the cake or decorating, and keep covered with a damp cloth.
Divide or multiply this recipe to suit your needs.
