Old Fashioned Jam Cake
|Butter/Margarine||1 Cup (16 tbs)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Strawberry jam||1 Cup (16 tbs)|
|Flavorings||To Taste (Almond, vanilla or rose)|
|Unsifted all purpose flour||2 1⁄2 Cup (40 tbs)|
|Mixed dried and candied fruits and nuts||5 Pound|
|Baking powder||1 Teaspoon|
|Mixed spice||3 Teaspoon|
|Brandy/Sherry / strong coffee||1⁄4 Cup (4 tbs)|
Cream butter and sugar together, then beat in eggs one at a time.
Add jam and flavoring.
Sift 1 cup of the measured flour over the prepared fruit and nuts and toss to coat well.
Sift remaining flour with dry ingredients and stir into the egg mixture.
Add the dredged fruit and brandy.
Mix thoroughly and spread in two greased and paper or foil-lined deep loaf pans, or use 1 8 x 8 x 3 and 1 6-or 7-inch-square pan.
Bake at 275F for 2 to 4 hours, depending on pan size and depth of batter.
