Apple Coffee Cake
1 tsp sugar
1/4 cup lukewarm water
1/3 cup each, milk and sugar
1/4 cup butter
1/2 tsp salt
2 eggs, well beaten
2 cups unsifted all-purpose flour
3 apples, peeled and cored
2 tbs orange or lemon juice
Mix yeast and sugar into the lukewarm water and let stand until dissolved.
Scald milk, sugar, butter and salt together, then cool to lukewarm.
Beat eggs and add the milk and yeast mixtures.
Stir in the flour and beat until smooth.
Spread the batter in a greased 8x12-inch pan.
Cut each apple into 12 wedges and sprinkle with the orange juice.
Press the apple wedges, thin-side down, lightly into the batter, spacing them as evenly as possible.
Sprinkle with Streusel topping and let rise until doubled.
Cover with foil and bake at 375F for 25 minutes.
Uncover and continue baking 12 minutes longer or until top is brown and apples tender.
Cut into 24 2-inch squares.
