Orange Honey Cake
|Light vegetable oil||1⁄4 Cup (4 tbs)|
|Liquid/Solid honey||3⁄4 Cup (12 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Sifted all-purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1 Teaspoon|
|Freshly grated nutmeg||1⁄4 Teaspoon|
|Orange spice tea||1 Cup (16 tbs), cooled (Very Strong)|
In the large bowl of an electric mixer, combine oil, honey, sugar, eggs, and marmalade, and beat on high speed for 2 minutes.
In a separate bowl, mix together flour, baking powder, soda, salt, nutmeg, mace, and cinnamon.
Turn mixer to low speed and add dry ingredients alternately with cold tea.
Mix just until dry ingredients are blended in; do not overheat.
Pour batter into a greased 9-inch-square pan and bake in a 325°F oven, on the middle rack, for 1 hour and 10 minutes.
