Easy Crumb Cake
|Sifted cake flour||2 Cup (32 tbs)|
|Sugar||1 Scant Cup|
|Baking powder||2 Teaspoon|
|Eggs||2 , beaten|
|Milk||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
1. Heat oven to 350°. Grease an 8-inch square baking pan. Sift flour and sugar together into a mixing bowl. Cut in the butter with a tool or by breaking it into the flour with your hands until the flour clumps and has assumed the color of the butter. Set aside 1/2 cup of the flour-butter-sugar mixture for the crumb topping and add the cinnamon to it. Add baking powder to the flour mixture in the bowl, and mix well.
2. Add eggs one at a time, beating all the while with a wooden spoon. Gradually add the milk and vanilla until incorporated, beating only as much as necessary to combine the ingredients. Pour into the prepared baking pan. Top with the crumbs.
3. Bake for about 30 minutes, until a toothpick comes out clean.
