Nutmeg Feather Cake
|Butter||1⁄4 Cup (4 tbs)|
|Shortening||1⁄4 Cup (4 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||4 , beaten|
|All purpose flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Baking powder||1 Teaspoon|
|Icing sugar||1 Cup (16 tbs) (buttermilk)|
In a large bowl, cream butter and shortening.
Gradually add sugar and beat until light.
Beat in vanilla.
Add eggs and beat until light and fluffy.
Sift together flour, nutmeg, soda, baking powder, and salt.
Alternately add flour and buttermilk to creamed mixture, beating well after each addition.
Pour batter into a greased 12 by 9 by 2-inch pan.
Bake in a 350°F oven for 35 to 40 minutes, or until toothpick inserted in centre of cake comes out clean.
When cake is cool, sprinkle with icing sugar.
